A healthy twist on the Bakewell tart- these little bites are made with completely natural ingredients and are perfect to satisfy a sweet tooth. They are made with nothing but fruit and nuts, so are a great alternative to shop bought “cereal” or fruit bars. Make a big batch like we did and either keep in a tub in the fridge or pop them in the freezer- they defrost really quickly for a snack on the go. Try to get organic ingredients where you can.
Makes around 10 bites
1/4 Cup Dried Cherries
1/2 Cup Blanched Almonds
1/2 Cup Dried and pitted Dates 1 Tbsp Coconut Oil.
Few drops Natural Almond Extract
In a food processor, blend the almonds until they form a fine powder. Put this aside in a bowl. Then blend the cherries and dates together until they are very finely chopped and starting to get sticky. Add the almonds back into the processor with the fruit, melted coconut oil and the almond extract. Blend well until all mixed and starting to form a paste- this may take a few minutes. Take a small amount of the paste and form into a ball, you should be able to make around 10. Place on a plate and leave to set in the fridge for about an hour. Enjoy!
