Tasty as they are, Pizzas can sometimes be a little heavy on our digestive systems and often the shop bought ones are laden with saturated fat from all of the oil, cheese, fatty meats and other processed foods that are added. Here is the Joie de Vivre lighter and healthier version. It is an excellent way of having a favourite food, but with added vegetables and none of the unhealthy processed stuff! It is easy to make (much easier than making dough!) and quick to bake. You can top with any of your favourite ingredients – but if you’re going with this healthy base, try to keep your toppings natural and healthy too!
For 1 Medium sized Pizza
1 Tbsp Ground Almonds (or quinoa flakes or oat flour)
1/2 tsp Dried Oregano
1/2 clove garlic- minced
1/3 cup Grated Cheese- we like light Mozzarella
Little oil – we like coconut
Preheat the oven to 200 degrees Celsius.
Break the cauliflower up into a food processor and grind until it resembles rice or cous cous.
Put the cauli in a bowl with a little drizzle of oil, and cook in the microwave for about 4 minutes until soft. If you find your cauliflower is quite “wet” then put it into a clean tea towel or muslin and squeeze out the excess water – this will help the pizza crust to hold together and not go soggy.
Add the ground almonds, egg, organo, garlic and grated cheese to the cooked cauliflower and mix together.
Line a baking tray with parchment paper and spray with a little oil to prevent the pizza from sticking. Transfer the mix onto the paper and shape into a pizza base, around 2cm thick.
Bake in the oven for 12-14 minutes until it is set and starting to brown.
This is where you can add your favourite toppings! We make a tomato based sauce by frying 1/2 an onion for a few minutes until soft, add 1/2 can tinned tomatoes and 1 tbsp tomato puree. Add a sprinkle more oregano to really get that “pizza” flavour. After spooning this onto the cauli base, we topped with chopped pepper, mushrooms and a little more Mozzarella. Bake in the oven for a further 8 minutes until nice and brown. We then added our favourite rocket- we love adding greens to anything!
