Great for lunch or dinner served with a rocket salad or veggies, these are a great healthy alternative to this classic British food.
500g Turkey or chicken breast mince
1/2 tsp Sage
1/2 tsp Thyme
4 eggs – boiled for 6mins
Wholemeal breadcrumbs or ground almonds for coating
Preheat the oven to 200 degrees C.
Start by mixing the herbs into the mince until well incorporated.
Take a quarter of the mix and press flat onto a large piece of clingfilm until around 1/2 cm thick. Place a hard boiled egg in the centre of the mince mix and bring up the clingfilm to surround the egg with the mince. Shape into a ball with your hands. Repeat with the rest of the mix and eggs, removing the clingfilm when finished.
Roll the covered eggs in the breadcrumbs or ground almonds, and if you want, spray with a little olive oil – this helps to create a nice colour when cooked. Chill for around 30mins to firm up.
Place the eggs on a baking tray lined with tin foil. Bake in the over for around 25mins until the meat is cooked through. Serve with a delicious leafy salad.
