
If you’re looking for a healthy alternative to a mid-afternoon biscuit or choccy bar, a slice of this delicious, filling loaf will hit the spot nicely!
Ingredients:
2 large apples, peeled, cored and cut into cubes
1 cup ground almonds
1 cup oat bran
2 eggs
3 ripe bananas (mashed)
1/4 cup almond milk
6 tbsp olive oil
2 tbsp stevia or truvia (natural sugar substitute)
1 tsp baking powder
1 tsp ground cinnamon
1 tsp vanilla extract
Directions:
Preheat the oven to 180 degrees C. Lightly coat a loaf tin with 1/2 tsp olive oil.
Place diced apples in small saucepan with 1 tbsp stevia, 1/2 tsp ground cinnamon and 1/2 tsp vanilla extract – sauté on medium heat for about 5 minutes until golden brown then remove from heat and set aside.
In large bowl, whisk ground almond, oat bran, baking powder, remainder of cinnamon & stevia. In a second bowl, whisk olive oil, eggs, almond milk and vanilla essence. Slowly add the liquid mixture to the dry mixture, stirring until fully combined. Stir in the mashed bananas and fold in the apples. Pour the ‘batter’ into the loaf tin and bake for approximately 50 minutes (when wooden skewer comes out clean the loaf is ready). Allow to cool in the tin.
This loaf freezes well so you can make two and freeze one. Keeps well in an airtight container for 3-4 days.
You can add protein powder to this mix but you may need a little more almond milk depending on quantities added and how dense you like your loaf!
