These are an excellent balanced breakfast, or can be eaten at any time of the day as a snack too. They contain carbs and protein to keep you full, and you can add pretty much any other healthy ingredients you like to give them your favourite flavour. See below for some of our suggestions.
1 scoop your favourite protein
½ banana- well mashed
3 egg whites
Little dash of almond/ coconut/ soya or dairy milk
Variations- add any of the following ingredients to the basic mix before you cook:
- Cinnamon- around ¼ tsp
- Handful Blueberries
- Lemon Juice
- ¼ cup oats (if you want more carbohydrates in your recipe)
- 1 tbsp unsweetened shredded coconut
- 1 tbsp nut butter
Mix all of the ingredients in a bowl. This can either be made as one giant pancakes (it will be really thick, not the Crepe style we are used to in the UK), or a few little American style pancakes.
Over a medium heat, spray a frying pan with a little cooking oil- we like olive or coconut. Pour in the batter and leave to cook until bubbles start appearing on the surface and it is set underneath. Flip and leave to cook all the way through.
Top with fruit, nut butter, greek yoghurt, melted coconut oil- whatever takes your fancy!
