
With winter well on it’s way, what could be nicer than a bowl of heart warming soup? This delicious recipe is as healthy as it is easy to make.
Ingredients:
300g Sweet Potato, peeled and chopped into 2 inch chunks
1 large Carrot, chopped
1 Leek, sliced
1 Large onion, chopped
2 Garlic cloves, finely sliced
1tsp Ground Cumin
1tsp Ground Coriander
1tsp Smoked Paprika
Pinch Chilli Flakes
1tbsp Olive or Coconut Oil
750ml Vegetable Stock
Preheat the oven to 180 degrees celsius.
Put all ingredients bar the stock into an over proof dish and mix well until all of the vegetable are covered in the spices and oil. Roast for around 30 minutes until nicely browned and soft.
Add to a large pan with the stock, simmer gently for around 20 minutes.
Blend well until smooth.
