This Powerbowl is packed full of nutritious ingredients. Quinoa is a complete protein supergrain and contains all 9 essential amino acids. It is full of fibre to help keep you full and contains so many other nutrients; it is definitely worth incorporating into your diet.
We all hear how we should be eating more oily fish – mackeral is packed full of Omega 3 oils (essential fatty acids). EFA’s can’t be manufactured by our bodies, so they need to be incorporated into our everyday diet, and are great for helping with brain function.
This meal is great for lunch or dinner, is quick and easy to make and loved by the whole family.
1 cup quinoa or bulgar wheat
3 smoked mackeral Filets- flaked
1 pack tenderstem or purple sprouting broccoli
handful of pinenuts- toasted
1/2 cup black beans (we use tinned)
1 red onion- finely chopped or 4 salad onions sliced
Lemon juice and olive oil.
Cook the quinoa or bulgarwheat according to packet instructions and leave to cool a little. Steam the broccoli until just tender. Rinse the black beans and add to the quinoa with the mackeral, broccoli, pinenuts and onion.
Mix all the ingredients well and dress with a squeeze of lemon juice and light drizzle of olive oil.
