We love this Powerbowl for post-workout lunch. We like to cook up a big batch of Quinoa that we can keep in the fridge for a couple of days and add to our meals when we are in a hurry and don’t have time to cook. All these ingredients can be thrown together in 5 minutes- who says they don’t have time to eat healthily??
1/3 cup Quinoa
100g Tinned tuna (in spring water)
½ avocado- diced
100g mixed beans (we use tinned)
5 cherry tomatoes- halved
1 tbsp pesto
squeeze lemon juice
Rocket to serve
Cook Quinoa according to packet instructions. Leave to cool a little and mix in the pesto. Add all other ingredients and mix well. Serve on the bed of rocket.
This is great to make double quantities, to leave half in the fridge for lunch tomorrow.
